  • 1 cup cottage cheese Make sure to drain excess liquid for a firmer texture.
  • 1 cup shredded mozzarella cheese You can mix in more for extra cheesiness.
  • 1/2 cup almond flour or breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper To taste
  • Pizza sauce For dipping.
  • Toppings of choice E.g., pepperoni, bell peppers, olives.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cottage cheese, mozzarella cheese, almond flour or breadcrumbs, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until everything is combined.
  3. Form the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper.
  4. Optionally, top with your choice of toppings to add extra flavor.
Baking
  1. Bake for 15-20 minutes or until the bites are golden brown.
Serving
  1. Serve warm with pizza sauce for dipping.

Notes

Let the bites cool completely before storing in an airtight container. They can be kept in the refrigerator for up to 3 days, or frozen with parchment paper between them.
