  • 2 cups cooked rice Use leftover rice for convenience.
  • 1 lb chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning Adjust to taste.
  • Salt and pepper to taste
Optional toppings
  • avocado Sliced
  • salsa
  • cheese Grated, for topping
  • cilantro Chopped, for garnish

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add sliced chicken and cook until no longer pink.
  3. Stir in the sliced peppers and onion, and sprinkle with fajita seasoning, salt, and pepper.
  4. Cook until veggies are tender, about 5-7 minutes.
  5. In serving bowls, layer the cooked rice and top with the chicken and veggie mixture.
  6. Add your favorite toppings and enjoy!

Notes

Serve bowls warm. Present ingredients layered or mixed. Great for family meals or gatherings. Store leftovers in an airtight container for up to 3 days.
