  • 2 cups roasted red peppers, chopped Homemade roasted red peppers work well.
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup vegetable broth

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
  3. Stir in the chopped roasted red peppers, vegetable broth, salt, pepper, and oregano. Simmer for 5 minutes.
Cooking
  1. Place the cod fillets in a baking dish and pour the red pepper sauce over them.
  2. Bake in the preheated oven for 20-25 minutes, or until the cod is opaque and flakes easily with a fork.
  3. Garnish with fresh parsley and serve.

Notes

This dish pairs well with rice, quinoa, or a fresh salad. For a heartier meal, serve with crusty bread. You can add other vegetables like spinach or cherry tomatoes for more flavor. If you want heat, sprinkle some red pepper flakes into the sauce while it simmers. Allow leftovers to cool before refrigerating for up to 2-3 days. Reheat as desired.
