Cookie Dough
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Ensure butter is softened, not melted.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
Coating
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a small bowl, mix together the 1/4 cup of sugar and 1 tablespoon of cinnamon for coating.
  7. Scoop out tablespoon-sized portions of dough and roll them into balls.
  8. Roll each ball in the cinnamon sugar mixture until fully coated.
  9. Place the coated dough balls on the prepared baking sheet, spaced apart.
Baking
  1. Bake for about 10-12 minutes or until the tops are crackled and set.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Churro Crinkle Cookies are best served warm or at room temperature. They can be paired with vanilla ice cream or coffee, and stored in an airtight container at room temperature for about a week.
