  • 8 cups Rice Chex cereal These crispy little squares are the base of our mix.
  • 1 cup Mini pretzel twists Salty and crunchy, they add a delightful twist.
  • 3/4 cup Roasted almonds Adds a rich creaminess.
  • 3/4 cup Dried cranberries Juicy and tangy for flavor.
  • 1/2 cup Red & green M&M’s Adds sweetness and a festive touch.
  • 1 cup White chocolate chips Provides a luscious coating.
  • 1/4 cup Coconut oil Adds a hint of coconut flavor.
  • 1 tsp Pure vanilla extract Aromatic note for flavor.
  • 1/2 tsp Ground cinnamon (optional) For an extra layer of flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the Rice Chex, mini pretzels, roasted almonds, dried cranberries, and red & green M&M’s.
  3. In a small saucepan, melt the white chocolate chips and coconut oil over low heat. Stir until smooth.
  4. Remove the saucepan from heat, and add the vanilla extract and ground cinnamon (if using).
  5. Drizzle the melted mixture over the dry ingredients and mix well to coat everything evenly.
  6. Spread the mixture onto a baking sheet lined with parchment paper.
  7. Bake for about 10 minutes, stirring halfway through to ensure even coating.
  8. Let it cool completely before serving.

Notes

Store any leftover Christmas Chex Mix in an airtight container at room temperature for up to two weeks. For optimal taste, consume within a week if it contains dried fruits or chocolate.
