Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the Rice Chex, mini pretzels, roasted almonds, dried cranberries, and red & green M&M’s.
- In a small saucepan, melt the white chocolate chips and coconut oil over low heat. Stir until smooth.
- Remove the saucepan from heat, and add the vanilla extract and ground cinnamon (if using).
- Drizzle the melted mixture over the dry ingredients and mix well to coat everything evenly.
- Spread the mixture onto a baking sheet lined with parchment paper.
- Bake for about 10 minutes, stirring halfway through to ensure even coating.
- Let it cool completely before serving.
Notes
Store any leftover Christmas Chex Mix in an airtight container at room temperature for up to two weeks. For optimal taste, consume within a week if it contains dried fruits or chocolate.
