  • 1 cup Peanut butter creamy
  • 0.5 cup Unsalted butter softened
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1.25 cups All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
Chocolate Topping
  • 1 cup Chocolate chips semi-sweet or dark
  • 0.5 cup Toffee bits

Method
 

Instructions
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract and mix until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients to form a dough.
  5. Scoop dough into balls, place on the baking sheet, flatten slightly, and bake for 8–10 minutes until lightly golden.
  6. Allow cookies to cool completely. Melt the chocolate, dip half of each cookie, then sprinkle with toffee bits. Let set before serving.
