- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract and mix until fully combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients to form a dough.
- Scoop dough into balls, place on the baking sheet, flatten slightly, and bake for 8–10 minutes until lightly golden.
- Allow cookies to cool completely. Melt the chocolate, dip half of each cookie, then sprinkle with toffee bits. Let set before serving.
