- In a skillet, heat olive oil over medium heat.
- Add chopped chicken, cumin, garlic powder, salt, and pepper. Cook until the chicken is fully cooked, about 5-7 minutes.
- Stir in chipotle sauce, black beans, and corn, and cook for an additional 2-3 minutes.
- To serve, layer cooked rice at the bottom of bowls, top with the chipotle chicken mixture, diced tomatoes, and avocado.
- Add fresh veggies on top and enjoy!
Notes
Use leftover rice to save time. Adjust the chipotle sauce based on your spice preference. Add more veggies like zucchini or onions for extra nutrition.
