Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, chopped onion, chopped bell pepper, and cheese.
- In another bowl, whisk together the eggs and milk. Add the olive oil and mix well.
- In a separate bowl, mix the flour, baking powder, salt, and black pepper.
- Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
- Fold the chicken mixture into the batter until evenly mixed.
- Pour the mixture into a greased baking dish.
Baking
- Bake in the preheated oven for about 30-40 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Allow it to cool for a few minutes before slicing.
Notes
Chicken Cake can be served warm or at room temperature. Cut it into squares or wedges and pair it with a side salad or steamed vegetables for a complete meal. Store in the refrigerator for up to 3 days or freeze for up to 2 months.
