- In a bowl, mix the shredded chicken and mashed avocado. Add mayonnaise if desired, and season with salt and pepper.

Cooking
- Heat a skillet over medium heat and add a bit of butter.
- Grill the sandwiches on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from the skillet, slice in half, and serve warm.
