Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the red food coloring and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- In another bowl, mix cream cheese and powdered sugar until smooth to create the filling.
Baking
- Scoop out dough and flatten it in your hand, adding a small spoonful of the cream cheese filling before folding and rolling into a ball.
- Place the dough balls on the prepared baking sheet, leaving space between them.
- Bake for 10-12 minutes until edges are set (cookies will look soft).
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store the cookies in an airtight container. They will stay fresh at room temperature for up to a week. For longer storage, refrigerate them and let them come to room temperature before serving.
