- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until translucent.
- Add the ground beef to the pot, breaking it up as it cooks. Cook until browned.
- Stir in the diced potatoes, beef broth, salt, pepper, and Italian seasoning.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the potatoes are tender.
- Once the potatoes are cooked, stir in the shredded cheese until melted and creamy.
Notes
Serve Cheesy One Pot Beef and Potatoes hot out of the pot with a green salad or crusty bread. For added flavor, sauté bell peppers or mushrooms with the onions. You can freeze leftovers in a freezer-safe container for up to 2-3 months.
