  • 1 pound ground beef Can substitute with leftover roast beef or cooked chicken.
  • 4 medium potatoes, diced Sweet potatoes can be used for a different flavor.
  • 1 cup shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Add the ground beef to the pot, breaking it up as it cooks. Cook until browned.
  4. Stir in the diced potatoes, beef broth, salt, pepper, and Italian seasoning.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the potatoes are tender.
  6. Once the potatoes are cooked, stir in the shredded cheese until melted and creamy.

Notes

Serve Cheesy One Pot Beef and Potatoes hot out of the pot with a green salad or crusty bread. For added flavor, sauté bell peppers or mushrooms with the onions. You can freeze leftovers in a freezer-safe container for up to 2-3 months.
