  • 12 ounces Tortellini (fresh or frozen) Fresh tortellini recommended for best flavor.
  • 8 ounces Fresh mozzarella cheese Diced.
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Fresh basil leaves Torn or whole leaves.
Dressing and seasoning
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • to taste Salt
  • to taste Black pepper

Method
 

Preparation
  1. Cook the tortellini according to package instructions and drain.
  2. In a large bowl, combine the cooked tortellini, halved cherry tomatoes, and diced fresh mozzarella.
  3. Add fresh basil leaves.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Season with salt and black pepper to taste.
  6. Toss everything gently and serve immediately or chill for an hour before serving.

Notes

Leftovers should be stored in an airtight container in the refrigerator and eaten within 2-3 days. Store the tortellini and dressing separately until ready to serve for optimal freshness.
