  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt (adjust to taste)
  • 0.25 teaspoon black pepper
  • 0.5 lemon juice (from ½ lemon)
  • to taste fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Slice the chicken into even strips and toss it in a bowl with Cajun seasoning, smoked paprika, salt, and black pepper. Let it marinate for 10 minutes.
Cooking the Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and sear for 4–5 minutes per side until golden and cooked through. Remove and set aside.
Sautéing Vegetables
  1. In the same skillet, add more oil if needed. Add sliced bell peppers, onion, and garlic. Cook for about 5–7 minutes, stirring occasionally, until tender but still vibrant.
Combining and Finishing
  1. Return the chicken to the skillet with the veggies, squeeze over the lemon juice, and stir well to combine everything. Cook for another 2 minutes.
Serving
  1. Garnish with chopped parsley and serve hot over rice, cauliflower rice, or in warm tortillas.

Notes

Adjust spiciness by adding more or less Cajun seasoning. Marinate the chicken longer for extra flavor. Use a mix of colored peppers for visual appeal.
