Ingredients
  

For the chickpea filling
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/4 cup carrots, shredded
  • 2 tablespoons vegan mayo
  • to taste salt and pepper
For serving
  • whole wheat wraps or tortillas
  • lettuce leaves (optional)

Method
 

Preparation
  1. In a bowl, mash the chickpeas slightly with a fork.
  2. Add the buffalo sauce, celery, red onion, carrots, vegan mayo, salt, and pepper and mix until well combined.
  3. Lay out the wraps and place lettuce leaves if using.
  4. Spoon the chickpea mixture onto each wrap and roll it up tightly.
  5. Slice in half and serve immediately or store in the fridge for meal prep.
