Ingredients
  

Crust Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
Filling Ingredients
  • 1 cup cream cheese, softened Make sure it is softened to room temperature.
  • 1/2 cup granulated sugar Adjust based on sweetness preference.
  • 1 teaspoon vanilla extract
  • 2 cups fresh blackberries Frozen blackberries can be used, thawed and drained.
  • 1/2 cup chopped pistachios Can substitute with other nuts.
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix the flour and powdered sugar. Cut in the butter until crumbly. Press the mixture into the bottom of the prepared pan.
  3. Bake for 15 minutes until lightly golden.
  4. In another bowl, beat the cream cheese and granulated sugar until smooth. Add the vanilla and lemon juice, mixing until well combined.
  5. Fold in the blackberries carefully to maintain their shape.
  6. Spread the cream cheese mixture over the baked crust.
  7. Bake for another 25-30 minutes until set.
Serving
  1. Once cooled, sprinkle with chopped pistachios and cut into bars. Serve chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months. Wrap tightly to prevent freezer burn. Consider garnishing with additional blackberries or pistachios for added flair.
