Preparation
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix the flour and powdered sugar. Cut in the butter until crumbly. Press the mixture into the bottom of the prepared pan.
- Bake for 15 minutes until lightly golden.
- In another bowl, beat the cream cheese and granulated sugar until smooth. Add the vanilla and lemon juice, mixing until well combined.
- Fold in the blackberries carefully to maintain their shape.
- Spread the cream cheese mixture over the baked crust.
- Bake for another 25-30 minutes until set.
Serving
- Once cooled, sprinkle with chopped pistachios and cut into bars. Serve chilled or at room temperature.
