  • 1 can can of Spam, diced
  • 8 small small corn or flour tortillas
  • 1 cup shredded lettuce Using pre-shredded lettuce is a time saver.
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (like cheddar or Monterey Jack) Feel free to use your favorite cheese.
  • 1/4 cup chopped onions
  • 1/4 cup cilantro, chopped Optional, can omit if not preferred.
  • Sour cream (optional)
  • Salsa (optional)
  • Lime wedges (for serving) For a burst of freshness.

Cooking
  1. In a skillet over medium heat, cook the diced Spam until crispy and browned, about 5-7 minutes.
  2. Warm the tortillas in a separate pan or microwave.
Assembly
  1. Assemble the tacos by layering the Spam, lettuce, tomatoes, cheese, onions, and cilantro in each tortilla.
  2. Add sour cream and salsa if desired.
  3. Serve with lime wedges on the side.

Notes

If you have leftovers, store the Spam mixture and toppings separately in airtight containers in the refrigerator. The cooked Spam will stay fresh for up to 3 days. Reheat the Spam before adding it to new tortillas. Keep the veggies and other toppings in the fridge, so they stay crisp. For extra flavor, try seasoning the Spam with garlic powder or chili powder as it cooks. To customize, use different proteins like chicken or beef, or add toppings like avocado or black beans.
