Apple Filling
  • 7 medium Apples, peeled, cored, and sliced Use Granny Smith, Honeycrisp, Fuji, or a mix
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar Packed
  • 1/4 cup Cornstarch
  • 1 cup Water
  • 2 teaspoons Ground cinnamon
  • 1/4 teaspoon Ground nutmeg Optional
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1/4 teaspoon Salt
  • 1 tablespoon Butter

Instructions
  1. Peel, core, and slice the apples into even 1/4-inch slices. Toss with lemon juice to prevent browning.
  2. In a medium saucepan over medium heat, whisk together granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, and water. Cook until the mixture thickens and becomes glossy.
  3. Add sliced apples to the saucepan and stir gently to coat in the sauce.
  4. Reduce heat to medium-low and cook for 8–10 minutes, stirring occasionally, until apples are slightly tender but still hold their shape.
  5. Remove from heat and stir in butter until melted. Allow filling to cool before using in pies or other desserts.

Notes

Use a mix of tart and sweet apples for the best flavor. Do not overcook the apples, as they will continue to soften during baking. Filling can be refrigerated up to 5 days or frozen for up to 3 months.
