- Peel, core, and slice the apples into even 1/4-inch slices. Toss with lemon juice to prevent browning.
- In a medium saucepan over medium heat, whisk together granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, and water. Cook until the mixture thickens and becomes glossy.
- Add sliced apples to the saucepan and stir gently to coat in the sauce.
- Reduce heat to medium-low and cook for 8–10 minutes, stirring occasionally, until apples are slightly tender but still hold their shape.
- Remove from heat and stir in butter until melted. Allow filling to cool before using in pies or other desserts.
Notes
Use a mix of tart and sweet apples for the best flavor. Do not overcook the apples, as they will continue to soften during baking. Filling can be refrigerated up to 5 days or frozen for up to 3 months.
