- Heat olive oil in a large pot over medium heat. Add onion and cook until soft, then add garlic and stir until fragrant.
- Stir in diced tomatoes, tomato paste, and chicken broth. Mix well to create the stew base.
- Add potatoes, corn, and lima beans. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender.
- Stir in shredded chicken and pulled meat. Let simmer for 10 minutes.
- Season with vinegar, brown sugar, Worcestershire sauce, smoked paprika, salt, and pepper. Simmer 10 more minutes and serve hot.
