  • 4 cups Chicken broth
  • 1 can Diced tomatoes 14 oz
  • 2 tbsp Tomato paste
  • 2 cups Potatoes, diced
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Lima beans frozen or canned
  • 2 cups Cooked shredded chicken
  • 1 cup Cooked pulled meat or smoked turkey family-friendly substitute
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Smoked paprika
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper

Method
 

Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft, then add garlic and stir until fragrant.
  2. Stir in diced tomatoes, tomato paste, and chicken broth. Mix well to create the stew base.
  3. Add potatoes, corn, and lima beans. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in shredded chicken and pulled meat. Let simmer for 10 minutes.
  5. Season with vinegar, brown sugar, Worcestershire sauce, smoked paprika, salt, and pepper. Simmer 10 more minutes and serve hot.

Notes

This Brunswick stew tastes even better the next day. Adjust thickness with extra broth if needed and serve with cornbread or biscuits.
