  • 4 cups mixed salad greens
  • 1 cup carrots (julienned)
  • 1 cup red bell pepper (sliced)
  • 1/2 cup cucumber (sliced)
  • 1/4 cup green onions (sliced)
  • 1/4 cup sesame seeds For topping.
For the dressing
  • 1/4 cup soy sauce Use gluten-free soy sauce for a gluten-free option.
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or sugar Adjust to taste.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine salad greens, carrots, red bell pepper, cucumber, and green onions.
Dressing
  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, salt, and pepper to make the dressing.
Combine
  1. Add the crispy chicken to the salad and drizzle the dressing over the top.
  2. Toss everything together to combine, and sprinkle with sesame seeds.
Serving
  1. Serve immediately or refrigerate for meal prep.

Notes

To store the salad, keep it in an airtight container in the refrigerator. Store dressing separately until ready to serve.
