- Wash and hull the strawberries. Blend until completely smooth.
- In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.
- Pour strawberry puree into a saucepan. Add sugar and heat gently until sugar dissolves. Stir in bloomed gelatin and mix until fully dissolved. Do not boil.
- Remove from heat and allow mixture to cool slightly while still liquid.
- Using an electric mixer, beat the mixture on high speed until thick, light in color, and fluffy with increased volume.
- Line an 8-inch square pan with parchment paper. Pour in the whipped mixture and smooth the top.
- Refrigerate for 1–2 hours or until fully set. Slice into squares and serve chilled.
Notes
For best results, whip the mixture while it is cooling but still fluid. Do not overheat the gelatin mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as it may affect texture.
